This raw milk Feta-style cheese is crumbly, complex and medium-salty. It is made right in Staunton, VA by Ballerino Creamery using fresh, unpasteurized milk from well treated, pastured cows. The only other ingredients are cultures, enzymes and salt. Because the milk is raw, this cheese is a neat way to 'taste' the land we live on.
We suggest crumbling it over freshly roasted eggplants or using in this recipe from The Spruce Eats for a delicious Greek Roasted Eggplant and Feta dish. Or tossing with a mixture of oven roasted veggies (then topping with lemon juice and EVOO) for a super simple, super satisfying dinner.
Unlike previous weeks, this week's unit is 5 oz of crumbled Etta and packed in a 100% compostable container. This cheese has a short shelf life. Use within 5 - 7 days.
